Simonnet-Febvre has one of the richest histories in Chablis. Along with fine still wines, the estate has long been renowned for its bottles of fizz. So much so, that in 1891, Burgundy giants, Louis Latour, celebrated the purchase of Château Corton with Simonnet-Febvre ‘sparkling Chablis’ – the makings of what is now called Crémant de Bourgogne.
